For Chicken Marinade:
Boneless Chicken Breast or Thigh- 1/2kg
Salt-1/2tsp
Turmeric Powder-1/2tsp
Red Chili Powder-1/2tsp
Mustard Powder-1/2tsp
Black Pepper Powder-1tsp
Cumin Powder-1tsp
Ginger Paste-1tsp
Egg-1
For Batter Mixture:
All Purpose Flour (Maida)-1/2 Cup
Corn Starch-3tbsp
Salt-1/2tsp
Directions
- To make the sauce, combine mayonnaise, heavy cream, mustard sauce, ketchup, honey, lemon juice, black pepper powder, and salt in a bowl. Stir until smooth, then transfer it to a squeeze bottle.
- For the chicken, make small holes in each piece to help it absorb the marinade.
- In another bowl, mix salt, turmeric powder, red chili powder, mustard powder, black pepper powder, cumin powder, ginger paste, and an egg.
- Coat the chicken strips evenly, cover, and refrigerate for at least 30 minutes or longer if possible.
- In a separate bowl, combine all-purpose flour, cornstarch, and salt. Dredge the marinated chicken in this mixture, shake off any excess, and set aside.
- Heat oil in a pan over medium heat until it reaches 170°C. Carefully add the chicken strips and fry for 9-10 minutes, avoiding stirring for the first 5 minutes to preserve the coating.
- Flip after 5 minutes, lowering the heat if needed to maintain a steady oil temperature. Once golden, remove and drain the chicken.
- Chop the fried chicken into small pieces, then layer it with crispy French fries, sauce, and vegetables like capsicum and olives in a baking dish.
