Directions
- Heat 3 tablespoons of oil in a pan over medium flame. Once the oil is hot, sauté chicken breast cubes until they turn light brown. In a separate pot, bring rice to a boil with water level one inch above the rice and season with salt to taste. In the pan with the fried chicken, add garlic and ginger paste, and fry for one minute. Introduce lemon juice, 2 tablespoons of soy sauce, and BBQ sauce, and fry for an additional minute. Incorporate vegetables and cook for 2 minutes, then drizzle 2 tablespoons of oil over the mixture.
- Meanwhile, as the rice is halfway through boiling, add 2 tablespoons of soy sauce and let it cook until the water evaporates, ensuring the rice is fully cooked.
- Now, season the fried chicken with salt, red chili powder, and black pepper powder, frying for an additional minute. Add yellow and red food colors once the rice is fully cooked, and combine the fried chicken and vegetables with the rice. Your BBQ fried chicken and vegetable rice is now ready to be served.
