Restaurant Style Chicken Dum Biryani 

Ingredients

  • 𝐈𝐧𝐠𝐫𝐞𝐝𝐢𝐞𝐧𝐭𝐬 𝐟𝐨𝐫 𝐂𝐡𝐢𝐜𝐤𝐞𝐧 𝐏𝐫𝐞𝐩𝐚𝐫𝐚𝐭𝐢𝐨𝐧

  • Chicken-1kg (2.2lb)

  • Oil-1/2 Cup

  • Blended Yogurt-1 Cup

  • Distilled White Vinegar-1tbsp

  • Garlic Paste-1tsp

  • Ginger Paste-1tbsp

  • Green Chili Paste-1tsp

  • Salt as Taste

  • Red Chili Powder-1tsp

  • Turmeric Powder-1/2tsp

  • Black Pepper Power-1/2tsp

  • Garam Masala-1/2tsp

  • Fennel Crushed-1tsp

  • Onion Powder-1tsp

  • Green Cardamom Powder-1/4tsp

  • Black Cardamom-3

  • Tomatoes Paste-1tbsp

  • Mint Leaves-1/2 Cup

  • Green Coriander Leaves-1 Cup

  • 𝐈𝐧𝐠𝐫𝐞𝐝𝐢𝐞𝐧𝐭𝐬 𝐟𝐨𝐫 𝐁𝐨𝐢𝐥𝐢𝐧𝐠 𝐑𝐢𝐜𝐞:

  • Sella or Basmati Rice-3 Glasses

  • Salt as Taste

  • Black Pepper Seeds-1/2tsp

  • Clove-1/2tsp

  • Cinnamon Stick Half Inch-1 Piece

  • Green Cardamom-3

  • Black Cardamom-3

  • Ginger Paste-1tsp

  • Desi Oil-1tbsp

  • Oil-5tbsp

  • Food Color Yellow and Orange

Directions

  • In a frying pan, add 1 kg chicken. Add distilled white vinegar, garlic paste, ginger paste, green chili paste, and salt as taste, red chili powder, turmeric powder, black pepper powder, garam masala, crushed fennel seeds, onion powder, green cardamom powder, and black cardamoms.
  • Then add tomato paste, mint leaves, green coriander leaves, blended yogurt, and 1/2 cup oil.
  • Mix everything well and cook until the chicken is tender.
  • Now chicken is fully tender.
  • For boiling rice take a pan and fill it with water to a boil. Add salt as taste, black pepper seeds, cloves, a 1/2-inch cinnamon stick, green cardamoms, black cardamoms, ginger paste, desi ghee/oil, and oil.
  • Stir well. Once the water is boiling, add 3 glasses of sela or basmati rice. Cook the rice until it’s 75-80% done. When rice gets 80% cooked then stain water for the rice.
  • To mix biryani take a pan and sprinkle oil. Add a layer of boiled rice, followed by a layer of the chicken masala. Repeat the layers of rice and chicken. Sprinkle red and orange food coloring on top for a vibrant look, along with some mint and coriander leaves for garnish. Cover and steam the biryani on low heat for 15-20 minutes.
  • After 20 minutes, open the lid to reveal beautifully colored, flavorful Dum Biryani. Enjoy this delicious biryani with your loved ones!
